The first time I made these muffins, it wasn’t for a blog or a photoshoot—it was for my closest circle. A casual Sunday, a bit of leftover yoghurt in the fridge, and a fresh punnet of blueberries that had just the right level of tartness. I decided to try something new and put together this recipe I had bookmarked forever. What came out of the oven was more than just a batch of muffins—it was warmth, shared memories, and sticky fingers reaching for second helpings before the first ones had cooled.

To my joy (and slight surprise), everyone loved them. Even those who weren’t particularly “muffin people” were suddenly asking for the recipe. My family polished off a full tray by the end of the evening. And that’s when I knew—I had to write this one down.

Blueberry Muffins with Streusel Topping—My Recipe

Ingredients

For the streusel topping:

  • 90 g (¾ cup) plain flour
  • 50 g (¼ cup) light brown soft sugar
  • 45 g (3 tbsp) cold unsalted butter, cubed

For the Muffins:

  • 150 g (¾ cup) caster or granulated sugar
  • Zest of 1 lemon
  • 85 g (¾ stick) unsalted butter, melted and cooled
  • 75 g (⅓ cup) full-fat plain or Greek-style yoghurt, room temperature
  • 2 large eggs, room temperature
  • ½ tsp vanilla bean paste (or 1 tsp vanilla extract)
  • 240 g (2 cups) plain flour
  • 1¼ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 280 g (about 2 cups) fresh blueberries

Instructions

  1. Prep the Streusel:
    In a bowl, mix flour and sugar. Rub in the cold butter with your fingertips until the mixture becomes crumbly. Set aside.
  2. Preheat the Oven:
    Place the rack in the middle of the oven and preheat to 375ºF (190ºC). Line 10 muffin holes with paper liners.
  3. Zest & Mix Wet Ingredients:
    Rub the lemon zest into the sugar with your fingers—it smells divine and brings out the citrusy oils. Add the melted butter, yoghurt, eggs, and vanilla. Mix well.
  4. Prepare the Dry Mix:
    In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add the blueberries and gently stir until they’re coated in the dry mix. This keeps them from sinking to the bottom during baking.
  5. Combine:
    Fold the wet ingredients into the dry mix using a wooden spoon or spatula. The batter will be thick—don’t overmix!
  6. Fill & Top:
    Spoon the batter generously into the liners (fill to the brim!). Top each muffin with a generous amount of streusel.
  7. Bake:
    Bake at 375ºF (190ºC) for 26–28 minutes, until golden and a toothpick inserted comes out clean.
  8. Cool & Enjoy:
    Let them cool in the pan for 5–10 minutes, then transfer to a wire rack. Best served warm—or honestly, just straight out of the oven when no one’s watching.
