Ingredients
- 1½ cups oats (ground into a fine flour)
- ½ cup melted ghee, cooled to room temperature
- ⅓ cup jaggery powder
- 1 tsp baking powder
- Milk, added gradually as needed
- 1–2 tsp whole wheat flour (only if dough feels too sticky)
- Almonds for topping
Directions
- Start by blending the oats into a smooth, flour-like powder and set aside.
- In a mixing bowl, whisk the melted ghee and jaggery until they turn creamy and well combined.
- Add the oat flour and baking powder to this mixture. Blend everything gently.
- Add milk a spoonful at a time — just enough for the dough to come together. If it feels overly sticky, sprinkle in a little whole wheat flour to balance it.
- Shape the dough into small balls, flatten slightly, and press an almond on top.
- Arrange the cookies in a preheated air fryer and cook them at 160°C for 15 minutes.
- Flip the cookies and air fry for 5–6 minutes so the underside cooks evenly, then turn them right-side up and bake for another 5 minutes at 180°C to get that perfect golden finish.
- Let the cookies cool completely before storing them in an airtight jar — they firm up beautifully as they rest.
