Ingredients:
- 6–7 bread slices (crumbled into bread crumbs)
- 1 shot espresso
- 70 g mascarpone cheese
- ½ cup icing sugar (increase by ¼ cup for extra sweetness)
- ½ tsp vanilla extract
- 70 g whipped cream
- Cocoa powder (for dusting)
Instructions:
- Prepare Dough: Grind bread slices into crumbs. Add espresso shot and mix to form a dough.
- Cheese Filling: In a bowl, mix mascarpone cheese with icing sugar & vanilla extract. Fold in whipped cream.
- Shape Modak: Take a modak mould, line it with the bread dough (keep walls thin), and create an indent.
- Fill & Seal: Pipe the cheese mixture into the indent. Close with more bread dough and demould.
- Finish: Chill the modaks and dust with cocoa powder before serving.
